Here’s Judi’s family recipe for whole wheat pancakes:
“The whole wheat pancake recipe.
Mix 1 cup whole wheat flour, 2 tsp baking powder, and 1/2 tsp salt. (I use raw salt but less of it)
Stir in 1 T honey (can use brown sugar) into 3 T oil. Then add 1 cup buttermilk (can use regular milk) and 2 large eggs. Beat well. Mix flour into liquids until flour is moistened. Pour onto lightly greased griddle.
This is a really old recipe…from my grandma.”
Judi, didn’t have baking powder, so I made crepes with Thomas Jefferson’s cook’s recipe. Your flour is AWESOME!!! But I don’t have to tell you that.
Thank you so much for providing food for my family. Oh, I also mixed some of Katie’s jam with real maple syrup to put over them and rolled some fresh made peanut butter inside. My kids were in heaven. (and so was Lori and I..)
